01 — Pick

Only the red ones.

Hand-picked at 1,750 metres by the Muñoz family in Huila and the Kebele Hills cooperative in Sidama. Green cherries stay on the tree. There is no hurry on a hillside.

Altitude 1,650–2,050 mVarieties Caturra · Heirloom
02 — Roast

Light, on a roaster called Marguerite.

A 15-kilo Probat in a Collingwood warehouse, eleven minutes, dropped at 196 degrees. Light enough to keep the fruit; dark enough to taste like coffee at four in the morning.

Time 11 minDrop 196 °C
03 — Grind

Coarse, like sea salt.

Fine grinds hurry the extraction and bring the bitterness with them. Ours is coarse enough to read, which gives the water something to think about.

Grind 1,100 µmRest 36 h after roast
04 — Steep

Eighteen unhurried hours.

In filtered Melbourne rainwater at four degrees, one part coffee to eight parts water. Nobody stirs. The sugars come out on their own, without the acid that comes with heat.

05 — Filter

Paper, then cloth.

Two passes, by gravity. Clean enough to read a newspaper through, with the body still intact. It takes most of an afternoon and we have never found a faster way we liked.

06 — Can

Sealed within the week.

Nitro-dosed for a soft head, sealed in a slim 250 millilitre can that stays cold longer than a bottle. Twelve months of shelf life, though it has never lasted that long here.

What's in the can

Five things. One of them is time.

Overheard at the tasting bar

“I used to drink coffee the way you check your phone — reflexively, and a bit too much. Drift turned it back into a small ceremony.”

Collingwood, since 2021

We started Drift in a Collingwood warehouse with a 15-kilo roaster, a chest fridge and a theory: that the hurry had crept into the cup.

Espresso is a sprint. Cold brew is a long walk. We wanted the walk. Eighteen hours is simply how long it takes for the sugars to leave a coarse grind at four degrees without the bitterness coming with them.

Anything shorter and you can taste the shortcut. We would rather you tasted the morning.
